Crostino, meaning “little toast,” originated in Italy as an appetizer made originally using Italian Ciabatta (bread). These days Crostinis are made using French bread as well; using a variety of topping ranging from vegetarian to non vegetarian. This recipe is vegetarian in Mediterranean style. Be free to experiment!
Ingredients
· French bread (seasoned bread is optional)
· Butter
· Olive oil ( 2 tsp)
· Garlic (1/2 tsp)
· Mint (1 tsp)
· Tomato ( 12 thin slices)
· Olives (1/4 cup)
· Grated cheese (1/4 cup)
· Salt
· Black pepper( optional)
Procedure
· Slice the French bread into even round shapes, 8 baguettes should be enough.
· Chop the garlic and mint finely and thinly slice the tomato.
· Mix the garlic, mint and tomato with 2 tbs olive oil (black pepper optional) and pinch of salt (to taste) in a bowl and set aside.
· Chop olives (as many as you like for the topping, since many have different opinions on the taste, though 6 olives should suffice)
· Butter the bread slices and slightly grill them in the microwave (you can use the crisp or grill mode). Grill the bread until slightly golden brown (about 30 seconds or more)
· Remove the bread out and start topping them with the tomato-garlic-mint-olive oil mixture, olives and the grated cheese on the top
· Return the Crostinis into the microwave and grill for 3 minutes.
Serve hot.
